I am so glad that winter is behind us now.
Kid you not, it has been blistering cold in my part of the woods and I was longing for spring to come out for so much time.
It is always a big hassle to clean up the front porch with all the ice and snow everywhere. I’m sure you know the feeling.

The world starts to come alive again after the freeze. And so do I. What a feeling!
And what a perfect time to go out for a camping trip and just feel the energy and smell of fresh growth all around you.
My hubby doesn’t usually like camping as he usually sweats a lot in summer and attracts all the mosquitoes around (LOL) but in spring, it’s less hot and the ‘ladies’ bother him less. So, it’s a win-win to go now.
Although I usually know what to bring and organize my gear well, I do get confused sometimes what to eat during our trip.
So, I’ve looked extensively around the net and I found awesome quick and easy recipes to prepare during our camping trip.
These are my favorites and needless to say, I am sharing them with you!
#1 Campfire Stew
Bintu shows us how to make a tasty Campfire Stew, which is a hearty, flavorful and meaty stew. This recipe can be prepared with meat (gammon, beef or chicken) and veggies and cooked in 4 different ways, which include Weight Watchers points at end of the post as well as a video within the post. This heartens my soul. Try it out!

#3 Grilled Vegetable Salad
For a grill, it doesn’t necessarily mean grilling beef or chicken. There are amazing only-veg recipes out there and Beth here shows us how to prepare a Grilled Vegetable Salad composed of bell peppers, zucchini, yellow squash, onions and asparagus grilled to perfection and drizzled with a balsamic reduction sauce. I may skip meat just because of that. Lol. Absolutely mouth-watering!

#10 Dutch Oven Apple Cobbler
Dessert anyone? I have a sweet tooth and my hubby as well. So, any meal in the world would not be satisfying if there isn’t a sweet lovely dessert to finish an otherwise delicious main dish.
This is a great dessert recipe for camping and will complement any recipe I listed before.
