Look, I may not a busy mom but my job takes the most time of my day. Here’s why:
I try to make my day as productive as I can so that when I wake up, I drink my morning coffee and eat breakfast.
Most of the days, I prefer something quick for breakfast. Preferably healthy and quick.
This is why make-ahead breakfasts come in handy. It keeps me on my budget and it’s easy to do.
I also realized these freezer-friendly breakfast recipes prevent me from eating otherwise processed and unhealthy foods.

For dinner, I cook a meal that can be eaten for 2-3 days, so that the dinner budget is kept on track.
Here are some tips that could help you get into this make-ahead meal prep:
Tip #1: Start with simple recipes
I remember the first time when I made a big batch of breakfast burritos, I found the process overwhelming.
As a beginner, I tried to make various burrito fillings to make them less boring.
For example, you can prepare a 10-day batch at first and make 2 types of fillings.
If you’re loving it and want to go a step further, you can try making a bigger batch of 20 days with 3-4 different fillings
Me personally, I will do 2 fillings x 15 days batch.
It gets easier with time and I’m not messing up too much my kitchen.
Tip #2: Make space in your freezer
Lesson learned that when I do meal prep, it’s best to reorganize your space in the freezer compartment.
You would not want to mix your frozen chicken with your freezer breakfast.
My best advice is to separate your frozen cooked meals separately from the other groceries.
Tip #3: Invest in some good freezer containers

The breakfast burrito is a staple for make-ahead breakfast or lunch.
Easy to make, pop in the freezer for one month and reheat it every time you want to eat. Try this recipe to make it yourself!
My favorite thing to add to this is spinach, you can add frozen or fresh spinach to make it more healthy.
Defrost the spinach in microwave and add to the filling mix. I eat this with a cup of warm green tea for lunch!
